Martha's Eggnog

Marissa, forgetting to buy the eggnog, having the ingredients on hand, made this Saturday night for Sunday morning. We agreed that it could be made with less sugar and still please. For the sake of the kids, and a husband scheduled to teach Sunday school, she left out the Bourbon. ;-)

"Mom"egranite Martini

1/4 cup pomegranate juice
3/4 cup lemonade
3/4 cup seltzer water

Mix everything together and enjoy! Mix with ice and then strain, if you prefer it cold.

Prenatal Paradise Pineapple Mojito

8-10 fresh mint leaves
Juice from 1/2 lime
1t sugar
3 ounces pineapple juice
1 cup ice
4 ounces club soda
Pineapple slice

Crush mint leaves with sugar, add lime juice and lime pulp if desired, crush more. Add pineapple juice and club soda, pour over ice, garnish with pineapple slice and serve immediately.

"Mommy-to-be" Mudslide

1 cup ice
2 scoops coffee ice cream
1/2 cup chocolate milk
2T chocolate syrup
Whipped cream
Semi sweet chocolate shavings

Mix first four ingredients in blender until creamy. Top with whipped cream and chocolate shavings.

PiƱa Co"Mama"

1 cup ice
1/2 cup pineapple juice
1/2 cup milk
1/2 cup heavy cream
2T sugar
Pineapple slice
Lime wedge
Strawberry slices

Mix first five ingredients and blend to crush ice. Stir in strawberry slices, and garnish with pineapple and lime wedges.

"Mom"osa

Aaaaaand another prego drink!!!

3 oz orange juice
Dash of pineapple juice

1 1/2 ounces club soda
1/2 ounce simple syrup OR 1t sugar

Mix first six ingredients in glass, stir in sugar or syrup.
Garnish glass with orange slice.

Cosmopregnancy

Another prego drink!

2 cups ice
2 oz cranberry juice
1 oz fresh lime juice
Dash of sugar
5 oz club soda
Lime wedges
Fresh cranberries

Mix cranberry, lime, clube soda and sugar in a shaker. Put in glass and add fruite!

Bubbly baby

This is an alcohol free recipe but I'm sure adding some wouldn't be a problem :) This is a recipe for pregnant women who want to enjoy some fizzy holiday drink without the alcohol. I found these when I was pregnant with Nate.

2 liters cold ginger ale
46 oz chilled pineapple juice
64 oz chilled white grape juice
Raspberries
Strawberries

Mix all wet ingredients and put in glass. Add fruit and enjoy!

Hot Cranberry Punch

Long a Thanksgiving/Christmas favorite from my Melvin days, here is the hot punch recipe that simmers on the stove top or in a percolator all day long, accompanying football games or pumpkin pie or RITZ crackers with liverwurst and thinly sliced cucumber!

1 half gallon cranberry fruit cocktail
1 48 oz. can of pineapple juice
4-5 sticks cinnamon
1/2 tsp. whole cloves
1/2 tsp. whole allspice (optional)

Simmer all day. Can change proportions to suit.

Citrus Iced Tea

Boil, then simmer 10 minutes:
3 c water
2 whole cloves

Remove from heat, add 1 family sized tea bag and steep 10 minutes.

Add 1.5 c pineapple juice
1/2 c orange juice
2--4 T fresh lemon juice
2/3 c sugar

Kah'wah (Turkish Coffee)

When Kilby and Paul were in town they made us a dinner reminiscent of their Turkish layover on their move to Uganda in January. Kilby had me follow this recipe to go with the lovely dessert she made. Easy enough so copied here. See more at Food.com by chef FIFI.

For three servings:
2 c water
2 T FINELY GROUND coffee
1/4 t ground cardamom
1--2 T sugar (to taste)

Place water and sugar in pot large enough to boil. (Boiling coffee tends to boil up and over, so make sure it's big.) Once boiling, add coffee very slowly and decrease heat. Stir frequently, removing from burner until boiling up subsides, repeating this step 3--4 times. Do NOT leave pot unattended.

Serve in demitasse cups.

Turkish Coffee

  • Kilby made this for the family at our first reunion. It was so good I had to put it on the blog! Enjoy!!

  • 1 1/2-2 cups water
  • 2 tablespoons coffee (finely grounded)
  • 1/4 teaspoon ground cardamom
  • 1 -2 tablespoon sugar (to taste)

  • Place water and sugar in a large enough pot to boil the water.
  • Make sure you allow room, because boiling coffee tends to want to boil up and over.
  • Once boil is achieved, add coffee, very slowly, and decrease heat.
  • Stir coffee very frequently.
  • When making it, I let it comes to a boil and when it starts to boil up the pot I take it off the burner for 2 seconds, then repeat the steps 3-4 times.
  • Serve in demitasse cups.
  • *Do not leave coffee boiling on stove unattended, it WILL boil over*.
  • *If serving for a large group, just double or triple the recipe accordingly*.

    Steaming Latte or Cappucino and Iced Latte


    Leigh asks for my "recipe" for the latte and iced coffee I served her. Well, if you haven't got an espresso machine, I guess you could just drip or brew a very strong coffee. For two or three cups to share:

    Steam 1-1/2 -- 2 cups milk in microwave for one minute, in French press if you have one. Foam the hot milk with your press plunger, up and down until it thickens. Then re-nuke it for 20 seconds or more until it "grows"(but WATCH it, or you may have a microwave to clean up!).

    Pull 2 -- 3 shots of espresso, or make a cup of VERY STRONG coffee. Sweeten it as desired. Pour the hot coffee into mugs, and top with the foam.

    For our iced lattes, these days we're using a rounded tablespoon of PILON Instant Espresso, two tablespoons of sugar (or to taste), stirred in 8 -- 10 ounces of milk, and then poured over crushed ice.
