Chocolate Coconut Cookies

 Not sure where I got this in the first place, but here it is. I might substitute white chocolate chips for the choco ones and macadamia nuts for the coconut this time. Another nice change to this recipe is to use yellow cake mix and substitute cinnamon chips for chocolate, pecans for the walnuts, and sprinkling the cooled cookies with cinnamon.


Preheat oven to 350o


Combine and mix well:

1 box dark chocolate cake mix

2 sticks butter

2 eggs

Add and mix:

1 c shredded coconut

1.5 c crushed cornflakes

1/2 c rolled oats

1 c chopped walnuts

1 c chocolate chips


Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 350 for ten minutes. Makes 48. Sprinkle with powdered sugar when cool.

Peanut Butter Bars

Another from my favorite COUNTRY KITCHEN COOKBOOK, published in the late seventies by Tyndale House Publishers and now totally single pages with a rubberband holding it together. Made these the other day and will definitely make them again soon, but this time changing the frosting recipe for something more chocolatey and more of a glaze.

1/2 c shortening
1/2 c sugar
1/2 c brown sugar
1/3 c peanut butter
1 tsp vanilla
1 egg
1/4 c milk
1 c flour
1/2 t baking soda
1/2 t salt
1 c rolled oats

Cream first five ingredients. Add egg and milk. Sift together dry ingredients and blend into creamed mixture. Pour into 8-inch square pan and bake for 20-25 minutes at 350 degrees. Frost cake after it is cooled.

Cocoa frosting:
2 c 10x sugar
1/4 c cocoa
3 T butter, softened
2-3 T boiling water
1/2 t vanilla

Chocolate Chip Cream Cheese Squares

My friend, Jay Brownlow, has a Christmas party every year for my high school class. This is his mother's famous cookies which are at the Christmas party! Enjoy!!

9x12 pan
2 18oz choc. chip cookie dough rolls

Mix:
8oz cream cheese
1 egg
1 t vanilla

Slice 1 roll of choc. chip cookie dough into thin slices and line bottom of ungreased 9x12 pan.
Spread Cream cheese mixture evenly over cookie dough slices in pan.
Slice other roll of cookie dough and spread over cream cheese layer.
Bake in 350F oven for 30-40 minutes or until cookies look done.

Peanut Butter Crackers

This is my invention, influenced by a recipe I saw a while back for sugar free peanut butter cookies, which never turned out so hot for me. So here's my superior twist, with fewer ingredients, less work, and better results.

2 over ripe bananas
1/4 c peanut butter
1 c oats
1 t baking powder
Note: these measurements are approximate! I used 3 apple bananas, which are about half the size of a normal banana, a few spoonfuls of PB, oats and BP till it looked right. Go with your instincts.

Preheat your oven to its highest temperature.

Combine all ingredients in a food processor and blend till they come together in an other-worldly ball of dough. Try not to consume all the dough before you bake it.

Roll or press it out into a thin layer on a large baking sheet. You can tell if your dough is right if the consistency is not too sticky or goopy to make this an easy process.

Bake in the upper third of the oven for 5 minutes. Then turn off the oven and remove the cracker dough, which by this time should be browned on the bottom, but still soft enough for you to cut into squares of your desired size.

Return the crackers to the hot oven and leave in for up to two hours, till thoroughly cooked and dried out. Let cool completely on the counter.

If you don't eat them all instantly, you could probably store them in an airtight container for a couple weeks.

Applesauce Oatmeal Chocolate Chip Cookies

Hahaha! Try saying all of that 3 times fast :) I absolutely love these cookies because they are so moist!

  • 1/3 cup butter, softened
  • 2/3 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/2 cup applesauce
  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups rolled oats


  • In bowl beat butter till creamy. Add brown sugar, cinnamon, and baking soda. Stir until combined. Mix in applesauce and egg. Add flour, a little at a time. Stir in oats.
  • Drop dough onto ungreased cookie sheets. Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until lightly browned.

Disgustingly Rich and Fairly Expensive Brownies

The smell of this baking is just about the best thing ever in a home!

1-1/4 c baking cocoa
1-1/4 c flour
1/2 t salt
Sift these together in a large bowl and set aside.

1-1/2 c butter (3 sticks) Melt over low heat.

3 c sugar Stir into melted butter with wooden spoon.

7 large eggs Beat lightly in separate bowl;
stir into butter/sugar mix in 3—4 equal additions.
Blend in 2 t vanilla extract.
Pour butter/sugar/egg mix into flour mix all at once and beat on low speed until well-blended.

Stir in a 1/2 pound of walnuts if desired.

Pour into 9x13x2 pan that has been greased with butter, or lined with greased aluminum foil.

Bake in preheated oven 350° for 40—45 minutes. Do not overbake.

Cool pan to room temp on rack.

Cowboy Cookies

Okay, this post is for Pam, Bryan Walker, and David. (Funny, now that I wrote Walker I am remembering it was a Wendy Walker who first made these cookies for my family to eat on the way back to evening church after we'd spent the afternoon at their home in Fayetteville, Arkansas.) Get wild with substitutions. Like when I take out the chocolate chips for Peter's sake and substitute craisins and a mess of cinnamon.

Cream 2 sticks butter, 1 cup white sugar, 1 cup brown sugar
Beat in 2 tsp. vanilla and 2 eggs
Mix in 2 cups flour, 1 tsp. baking soda, 1/2 tsp. salt, 1/2 tsp. baking powder
Mix in 2 cups oats
Mix in 1 cup walnuts (optional), 1 cup or more chocolate chips (not optional for Jeni), 1 cup shredded coconut (optional).

Eat some of the dough.

Drop by spoonfuls, small or large, and bake at 375 degrees for about 10 minutes.

Some really wonderful variation I picked up from the cooking channel was to preheat the oven (each batch! expensive) to 500 degrees. Shape your dough into balls larger than a ping pong ball, smaller than a tennis ball, and set about 8-10/cookie sheet. Bake for normal length of time, reducing heat to 325 as soon as you have put in the cookies. The cooled result is a crispy cookie on the outside and almost cookie dough on the inside.


World's Best Cookie

Neighbor Jean Smith brought these to a Lord's Day dinner and although the name of the cookie is a little self-acclaiming, it is hardly exaggerated and has been a big hit. I think the shortness from the extra cup of oil is part of its goodness.

Preheat oven to 350°

(Ingredients)
1 cup butter (2 sticks)
1 cup brown sugar
1cup salad oil
1 cup crushed corn flakes
1 cup chopped pecans
1 tsp. baking soda
1 tsp. vanilla
1 cup white sugar
1 egg
1cup oatmeal
1cup coconut
3 ½ cups flour
1 tsp. salt

Cream butter and both sugars, add egg, add oil slowly, beating well.
Add oats ,cornflakes, coconut, and nuts.
Stir well. Add flour, soda, salt, and vanilla, stirring well.
Form into balls the size of walnuts.
Place on ungreased cookie sheet.
Flatten with fork.
Bake 12 minutes.
350 degree oven.
