Banana Cake

2/3 c shortening
2-1/2 c sifted cake flour (2 c minus 2 T all purpose flour)
1-2/3 c sugar
1-1/4 t baking powder
1 t baking soda
1 t salt
1-1/4 mashed bananas (3)
2/3 c buttermilk
1/2 c eggs (2 lg.)
2/3 c chopped walnuts

Stir in shortening just to soften. Sift in dry ingredients. Add bananas and 1/2 of buttermilk. Mix until flour is damp. Then beat 2 minutes. Add rest of buttermilk and eggs. Beat 2 minutes. Fold in nuts. Bake at 350 for 30-35 minutes in a 9 x 13 pan.

The frosting listed with this particular recipe calls for
1/2 c shortening
1/2 c butter
1 c sugar
1 t vanilla
3/4 c milk

Beat five minutes.

Susan, my mom always put lemon frosting on banana cake, so therefore did I. That's what you remember about Sundays in Chattanooga. I used to make a buttercream frosting and add lemon juice and zest. Check the internet for recipes for such.
