My mom's Scandanavian friend, Norma, has this richer and simpler recipe for rice pudding.
3/4 c converted rice (Uncle Ben)
Water
4 c milk
1 c sugar
dash salt
1 can condensed milk
7 eggs
cinnamon
nutmeg
Cover rice in saucepan with water. Add 4 c milk. Bring to boil, then simmer until rice is soft. Add sugar, salt, and condensed milk and heat. Beat eggs by hand into rice mixture, one at a time.
Pour into casserole dish. Sprinkle with cinnamon and nutmeg. Bake at 350 in another pan of water. Stir halfway through bakng. Do not overbake, about 20 minutes or more. Jiggle pan to test doneness.
