Broccoli Soup for a Snowy Day in Colorado


Ah, there's a bag of broccoli segments in the freezer, Leigh! Shall I make some cream of broccoli soup? Yeah, we're kind of stuck in here with the powdery snow falling, so we need to use what we have. It worked:

Simmer together:

8 cups of water
3 T Knorr Chicken-flavored bullion (powder) or 9 cubes
32 oz. frozen broccoli

Saute:
1/4 white onion, chopped, in 3/8 c butter

Make roux by whisking into the butter 1/2 c flour

Slowly add some of the chicken broth to make it pourable into the stock.

Meanwhile, pull most of the cooked broccoli segments out of the broth and process them.

Add all of this together and salt and pepper to taste.

Add two shakes of nutmeg and a 1/2 c heavy cream.

Serve with nutmeg and or a sprinkle of freshly grated parmesan cheese on top.
