Traditionally served on Christmas Eve in the Swedish home were these meatballs, along with scalloped potatoes, potato sausage bought from your local Swedish butcher, Swedish Limpa Rye bread (to die for with butter and orange marmalade on it the next morning with your coffee!), cranberry jello, and rice pudding with lingonberries.
Okay, BJ's is now carrying Swedish meatballs in the freezer section, so I'm making life simple and using those this year in a homemade gravy that starts with a can of Campbell's Cream of Mushroom soup. But here's my mom's standard recipe (Check the blog for my grandmother's recipe):
2 lbs. ground beef/veal/pork
1 c bread crumbs (or frozen whole wheat bread turned to crumbs in food processor)
1/2 onion, chopped fine
1/2 c green pepper, chopped fine
1/2 c mushrooms, chopped fine
1 egg
1/2 t Lawry Seasoning Salt
1/2 t sage
1/2 t fines herbs
pinch of tarragon
Whisk egg in large bowl with touch of warm water and spices. Add bread crumbs, onion, green pepper, mushrooms, and meat loaf mix. Mix with hands. Scoop into balls with hands and place in casserole dish. Bake at 350 degrees F until done.
