Mamma Frato's Italian Meat Loaf

2# ground sirloin
4 eggs
1 c bread crumbs
1/2 t black pepper
2 T parsley flakes
garlic powder
6 oz. pepperoni
4 oz Swiss cheese
1/2 red pepper, sliced thinly
1/2 green pepper, sliced thinly
1 medium onion, sliced

1. Preheat oven to 350 degrees.

2.In a large bowl combine meat with eggs, bread crumbs, black pepper, parsley flakes, and garlic powder. Mix to blend well with your hands or wooden spoon.

3. On a large sheet of foil, flatten meat into oval shape about 1/2 inch thickness. Place another sheet of foil on top and press thickness down to 1/4 inch. Remove top sheet and evenly distribute pepperoni, Swiss cheese, red and green pepper slices, and onion slices.

4. Using the foil to help lift meat, roll up in jelly-roll fashion. Pinch edges to seal and place on baking pan, seam side down.

5. Bake for 1 hour, 15 minutes or until firm to touch.

Tiny and ancient Italian mamma with stories that never stopped came for Christmas one year with her bachelor son, bringing half the meal with her! This was one meatloaf we decided to repeat.
