Dear friend Barbaranne Kelly made this from her playbook (I think Bessie is her grannie or her great-aunt) for our family one Lord's Day long ago after a service at FPC. It was the beginning of a beautiful friendship!
1 c grits
3 c water
1 tsp salt
1 # grated cheddar cheese
1 c milk
1 stick butter
4 beaten eggs
1 tsp ground red pepper
paprika
Bring water and salt to boil in medium pan. Add grits, stirring to avoid lumping. After grits have absorbed the water, add milk and butter, stirring while butter melts. Cook for about 10 minutes. Add 3/4 of the cheese, the eggs, and the red pepper. Pour into casserole dish and cover with the rest of the cheese. Sprinkle paprika over top. Bake at 325 for 45-60 minutes.

Bessie was actually one of my Great-Grandmother's cooks in Louisiana. Bessie could neither read nor write, but she could sure cook. My Mom followed her around the kitchen one day and wrote down everything she did to make this dish. I am so glad she did. Can you imagine having to remember all of your recipes without being able to read them?! Bessie was amazing!
